High-Protein Strawberry Ice Cream
High-Protein Strawberry Ice Cream 💗 Ice cream was one of the things I missed most when I gave up sugar. I was delighted to discover that I could still enjoy my favorite dessert—not just on special occasions, but any day of the week—with this healthy homemade ice cream. Not only is it satisfyingly sweet, but the texture is just as rich and creamy as store-bought ice cream, without the harmful added sugars. During cancer treatment, when appetite can be low and eating may feel difficult, a cool, creamy high-protein dessert like this can be both nourishing and easy to enjoy—offering comfort while providing your body with wholesome ingredients.
Ingredients:
2 frozen bananas
1 cup frozen strawberries
1 cup cottage cheese
2 tablespoons almond butter
1 pitted date
1-2 tablespoons protein powder (for extra protein)
1. Place all ingredients in a blender or food processor.
2. Blend until completely smooth and creamy.
3. For a thicker, scoopable ice cream, freeze the blended mixture for 1–2 hours. For a softer, soft-serve texture, enjoy immediately after blend
