Fried Egg & Sautéed Vegetables Bowl
So GRATEFUL 🙏 for my plant, Ivy and her company today as she helped me to feel calmer and more peaceful, and more joyful with her beauty and presence next to my bowl full of healthy power greens, a fried egg for protein, sautéed asparagus, mushrooms, tomato, purple sweet potato, baby Bok choy, and Kamut (ancient grain). Freshly juiced beets, carrots, ginger, turmeric, celery, green apple, and a clove of garlic. My favorite part of the day is my mindful ritual of artfully creating my break-my-fast salad each morning and inviting a lovely plant to join me for breakfast. "Let food be thy medicine and medicine be thy food.” – Hippocrates
4 large eggs separated
¼ cup avocado oil (or ¼ unsweetened applesauce)
3 cups raw spinach
1 tablespoon vanilla
1 cup medjool dates
3 tablespoons matcha powder
1 tablespoon baking powder (I used ½ tablespoon)
¼ tsp salt
½ cup chickpea flour
½ cup almond flour or oat flour
¼ cup nonfat Greek yogurt
1. In a blender, blend the dates, spinach, oil, vanilla, and yogurt until very smooth. In a large bowl, beat the egg yolks for about a minute until airy.
2. Add the date mixture and whip until combined. Manually whisk in the flour, salt, matcha powder, and baking powder.
3. In a separate bowl, add the eggs whites. Beat for one minute until stiff peaks form. Fold it into the rest of the batter until fully combined. Pour into prepared muffin pan liners and bake for 15 to 25 minutes (time varies with each oven) at 350 degrees.
Beet Carrot Juice
6 large carrots
2 medium green apples
1 medium beet
2 or more stalks celery
1 (1-inch piece) fresh ginger
1 (1-inch piece) fresh turmeric
1 lemon
1 garlic clove
The beets and carrots in this juice are powerful cancer-fighting and cancer-healing foods providing vitamins, minerals, antioxidants, and phytonutrients that support digestion, assist in detoxification, and lowers inflammation. This recipe works best in a juicer. If you don’t have one, use a high-speed blender and then strain liquid through cheesecloth.
