Chocolate Pancakes

So GRATEFUL 🙏 for a lovely breakfast with my snake plant, Lucifer while sipping an exuberant blend of tea bursting with hibiscus flowers, orange peel, rose hips, passion fruit flavor, and a lively hint of cinnamon spice and eating chocolate pancakes made from oat flour and unsweetened applesauce (no sugar), topped with a scoop of plain Organic Greek yogurt, fresh strawberries,  and mint leaves for garnish.

Chocolate Pancakes

1 & 1/4 cups oat flour
2 Tbsp. unsweetened cocoa powder
1 Tbsp. baking powder
1 Tbsp. ground flaxseeds
1 Tbsp. cacao nibs
1/4 tsp sea salt
1 cup unsweetened almond milk
1 Tbsp. apple cider vinegar
1 tsp. vanilla
1/4 cup unsweetened applesauce

1. In a medium bowl stir together the first six ingredients (through salt).  In a small bowl combine milk, vinegar, vanilla.  Add milk mixture and applesauce to flour mixture.  Stir just until moistened.  Let stand 10 minutes (batter will thicken).

2. For each pancake, pour 1/4 cup batter onto a hot, lightly greased griddle or large nonstick skillet.  Cook over medium heat for 2 to 3 minutes or until surfaces are bubbly and edges are slightly dry.  Turn pancakes over and cook 1 to 2 minutes more or until light brown.  Serve warm. Top with a scoop of organic plain Greek yogurt,  strawberries, and fresh mint leaves for garnish.
