Green Split Pea Soup
Split Pea Soup 💚 I love starting my day with a cozy bowl of soup. Split peas are a powerhouse of protein and fiber, packed with nutrients that help support health and may reduce the risk of chronic diseases such as diabetes, heart disease, high blood pressure, and cancer. Their high fiber supports healthy digestion and balanced blood sugar, while rosemary adds a fragrant touch and extra antioxidants. Pure nourishment in every spoonful.
Green Split Pea Soup & a Sprig of Fresh Rosemary
Ingredients:
1 small onion, diced
2 celery stalks, diced
2 large carrots, diced
3 small potatoes, cubed
2 teaspoons smoked paprika
3 cloves garlic, minced
2 teaspoons curry powder
2 cups green split peas (dry)
8 cups filtered water or 1:1 vegetable broth to water
Directions:
1. In a large pot, combine the onion, celery, carrots, potatoes, paprika, garlic, and curry powder with a splash of water. Cook over medium heat for 3–5 minutes, stirring occasionally. Add 1–2 tablespoons of water as needed to prevent sticking.
2. Add the split peas and water or vegetable broth. Reduce the heat to medium-low and simmer for 30–40 minutes, until the split peas and potatoes are tender.
3. Remove from heat and stir in the juice of one lemon.
4. Garnish with fresh rosemary and/or parsley before serving.
