Superfood Energy Bites
Superfood Energy Bites ❤️ They're perfect to keep in the fridge or freezer for a quick, on-the-go breakfast or a nourishing post-workout snack. These energy balls are packed with nutrient-dense superfoods—goji berries, sunflower seeds, hemp seeds, flaxseeds, and dates—each offering powerful health benefits. Goji berries, in particular, are rich in antioxidants and immune-supportive compounds. While no single food is a cure, incorporating whole foods like these became a meaningful part of how I supported my body during my healing journey.
Superfood Energy Bites
Ingredients:
¾ cup pitted dates
¾ cup raw walnuts
¾ cup dried cranberries, or other dried fruit
¼ cup sunflower seeds
2 tablespoons goji berries
2 tablespoons chia seeds or hemp seeds
2 tablespoons ground flaxseed
½ teaspoon vanilla
½ teaspoon cinnamon
Directions:
1. In a food processor, combine the dates and nuts and pulse until the nuts are finely ground and the dates are incorporated.
2. Add the remaining ingredients and process until well combined. The mixture should be sticky. If it seems to dry to hold together, add a little water, one tablespoon at a time.
3. Roll into 1-inch balls. Refrigerate for 4 hours before serving. Store in the refrigerator or freezer.
