Beet Burgers
Beet Burgers 💜 I love these beet burgers, not just for their earthy, delicious flavor, but for the incredible nourishment they offer. Beets are a powerful healing food — rich in vitamins, minerals, antioxidants, and phytonutrients that support digestion, aid detoxification, and calm inflammation. The nutrients act together to promote cellular health, enhance immune defenses, contribute to lower blood pressure, and reduce the risk of multiple cancers. I love adding a beet bean burger to my daily giant salad with a scoop of hummus on top — it’s an excellent source of plant-based protein.
Ingredients:
½ cup rolled oats
½ cup walnuts
½ cup diced red onion
4 cloves garlic, minced
1 cup shredded beets
1 cup chopped mushrooms
½ tsp smoked paprika
½ tsp dry mustard
½ tsp cumin
½ tsp coriander
¼ tsp turmeric
1 tablespoon ground flaxseeds
1 & ½ cups black beans
1 cup cooked quinoa
salt & pepper to taste
Directions:
1. Preheat the oven to 375°F (190°C).
2. Prepare the mixture: Add the beets to a food processor and pulse until finely diced. Add the rolled oats and walnuts, pulsing again to combine. Add the remaining ingredients—red onion, mushrooms, garlic, spices, flaxseeds, and cooked quinoa—and process until the mixture is well combined but not completely smooth.
3. Form the patties: Shape the mixture into patties and place them on a baking sheet lined with parchment paper.
4. Bake for 30 minutes, flipping the patties gently halfway through cooking.
