Asparagus Soup

Asparagus Soup ๐Ÿ’š Asparagus is a nourishing, cancer-fighting vegetable that’s delicious raw, cooked, or blended into soup. Rich in vitamin K, folate, antioxidants, and fiber, it supports immunity and digestion. Green foods like asparagus carry the healing energy of nature. On an early-morning hike up Sugar Loaf Mountain, I found these delicate white wildflowers along the trail—bringing a small handful home adds a touch of joy to every meal.

Asparagus Soup

Ingredients

1 medium onion, chopped
4-6 cloves garlic, minced
2 pounds asparagus , trimmed and cut into 1-inch pieces
2 cups cooked cannelloni or other white bean
4 cups vegetable broth
Salt and freshly ground pepper to taste

Directions

1. Saute onion with a little water in large cooking pot until tender.  Add the garlic, asparagus, beans, and season with freshly ground pepper.

2. Pour in the vegetable broth and bring to a boil. Reduce to a simmer and cook for five minutes or until asparagus is tender.  Remove from heat and let cool.

3.  Working in batches, spoon the soup into your Vitamix or high-speed blender and blend until smooth and creamy.  Repeat until you have finished all the soup.

4.  Garnish with raw or lightly steamed asparagus stems and freshly ground pepper.  I like to add a few scoops of quinoa, a swirl of kefir, and some fresh parsley to my bowl of soup.
