Overnight Oats
Overnight Oats 💜 During chemo, overnight oats became my go-to breakfast. They were easy to prep the night before and ready to grab and go in the morning. I’d pop open my jar of overnight oats right after my lab work — a comforting, nourishing start before my infusions. You can make a week’s worth at once — five jars will keep beautifully in the fridge for up to five days, making mornings effortless. I use sprouted oats for extra protein, fiber, amino acids, and antioxidants. Sprouted grains are also easier to digest and help your body absorb nutrients more efficiently. To make my oats extra creamy (and to boost the protein), I stir in plain Greek yogurt. I also add chia seeds, which are packed with nutrients and have been shown to have anti-inflammatory and cancer-protective properties. When it comes to toppings, the options are endless — antioxidant-rich berries, gut-healing tropical fruits, coconut flakes, cacao nibs, matcha powder, nuts, and seeds are just a few of my favorites.
Overnight Oats
Ingredients:
½ cup rolled oats
½ cup unsweetened almond milk
¼ cup plain Greek yogurt
1-2 tsp chia seeds
Optional: 1 tsp honey or pure maple syrup
Your favorite toppings of choice: fruit, nut butter, nuts, seeds, etc.
The basic ratio for overnight oats is 1:1 of rolled oats to milk, plus half as much yogurt.
Directions:
1. Add oats, almond milk, plain Greek yogurt, chia seeds, and sweetener of choice into a jar with a lid. Stir ingredients together. Place in the fridge overnight. If you're in a rush you can shorten the soak time to 2-4 hours.
2. The next morning (or when ready to eat), remove lid and give oats a stir. If they seem too thick you can add a little more milk to loosen the mixture. Top with your favorite toppings and enjoy.
My Favorite Overnight Oats:
Berry Overnight Oats - add your favorite fresh berries, cinnamon, cardamon, allspice, nutmeg or cloves.
Tropical Overnight Oats - add fresh pineapple, mango, coconut flakes and shaved almonds.
Chocolate Peanut Butter Overnight Oats - add 1 tablespoon unsweetened cacao powder, 1 tablespoon peanut butter, banana slices and cacao nibs.
Matcha Overnight Oats - add 1 teaspoon matcha powder and top with strawberries, raspberries or blueberries.
