Peachy Basil Chicken and Rice Bowl
Peachy Basil Chicken & Rice Bowl 🧡 The pairing of chicken and peaches makes such a tasty duo! I especially love how the juicy, sun-ripened peaches, fresh basil, and crisp fennel come together in this nourishing bowl. Fennel is a medicinal and culinary herb rich in antioxidants, phytonutrients, and essential oils that may offer supportive benefits for people undergoing cancer treatment or recovering from it. Not only does basil enhance the taste of your food, but it also supports your health in many ways. Its antioxidants, anti-inflammatory compounds, and immune-boosting properties, along with support for digestion, liver function, and mental clarity, may help the body manage side effects and maintain well-being during cancer treatment. Creating Buddha bowls remind me to cultivate gratitude each day — one of the most powerful paths to peace of mind and lasting happiness.
Peachy Basil Chicken and Rice Bowls
Ingredients:
2 cups cooked jasmine rice
2 boneless, skinless organic chicken breasts, cut into cubes
1 tablespoon ghee
1 cup chopped fresh basil
2 fresh peaches, pitted and thinly sliced
2 tablespoons avocado oil or extra-virgin olive oil, divided
6 packed cups baby spinach
4 cloves of garlic, minced
1 medium cucumber, chopped
1 small fennel bulb, trimmed and thinly sliced
Basil Goat Cheese Sauce:
4 ounces goat cheese
1 tablespoon extra-virgin olive oil
6 tablespoons water
Directions:
1. Cook the chicken:
Heat 1 tablespoon of oil in a skillet over medium heat. Add the chicken and cook, turning occasionally, until golden brown on all sides, about 5 minutes. Add the ghee, basil, and sliced peaches, and cook for 1 minute, stirring to coat the chicken evenly.
2. Sauté the greens:
In a separate skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the spinach, garlic, and fennel, and cook, tossing frequently, until the spinach is wilted, about 2 minutes.
3. Assemble the bowls:
Divide the rice among serving bowls. Top with the chicken and peaches, the spinach mixture, and chopped cucumber. Finish with a drizzle of basil goat cheese sauce.
