Toasty Egg & Avo
Toasty Egg & Avo 💛 After chemo, when I couldn’t stomach much of anything, eggs and toast were my go-to. One night I’ll never forget: I was too sick to come to the dinner table, and my son-in-law, Weston, quietly brought me eggs and toast—arranged as a smiley face. That simple, thoughtful gesture spoke volumes and lifted my spirit when I needed it most. It meant the world to me. Eggs are a wonderful source of high-quality protein that helps maintain muscle mass—something especially important during cancer treatment. Avocados, too, are a great addition: they’re rich in healthy fats that support weight maintenance and offer cancer-protective benefits thanks to their antioxidants, phytonutrients, and anti-inflammatory properties. I’m especially fond of these beautiful multicolored eggs from Eco Farm, where I volunteer—the chickens there are fed microgreens.
Toasty Egg & Avo
Ingredients:
2 eggs
2 slices Ezekiel bread or sourdough
½ avocado
Red onion, thinly sliced
salt & pepper to taste
Optional: raw spinach
Directions:
1. Fry the eggs on both sides or prepare as you prefer.
2. Toast two slices of bread in the toaster oven.
3. Place the fried eggs on top of the toasted bread. Then add the red onion, avocado, raw spinach (if using), salt and pepper to taste.
Ezekiel bread is made from sprouted whole grains and legumes, which offer a range of nutritional and digestive benefits. Spouted grains make it easier for your body to digest and absorb nutrients. Ezekiel bread contains all 9 essential amino acids, making it a complete protein—rare for a plant-based bread. It has about 5 grams of protein per slice and is free from added sugars, preservatives, and artificial ingredients—unlike many commercial breads.
