Nature's Toast

Nature's Toast 💛  When I cut sugar out of my diet, one of the things I missed most was a classic peanut-butter-and-jelly sandwich—or even just toast with jelly. I was delighted to discover a simple swap that’s just as satisfying: a slice of toast topped with unsweetened nut butter and fresh fruit. I started calling it Nature’s Toast, and it quickly became the sweet little treat I looked forward to. Nut butters are an easy way to add both protein and healthy fats, and they pair perfectly with Nature’s Toast. With this snack, you’re not only getting a protein boost from the nut butter, but also the nourishing benefits of fresh fruit. Fruit slices provide essential vitamins and minerals, antioxidants, hydration, natural fiber for digestion, and gentle, natural sugars for quick energy—exactly what your body appreciates when it’s under extra stress.

I use Ezekiel bread because it’s made from sprouted whole grains and legumes, which offer a variety of nutritional and digestive benefits. Ezekiel bread also contains all nine essential amino acids, making it a complete protein—something that’s rare in a plant-based bread. Each slice provides about 5 grams of protein and is free of added sugars, preservatives, and artificial ingredients, unlike many commercial breads.

 Nature's Toast

Ingredients

  • 1 slice of whole-grain or sprouted-grain bread (such as Ezekiel bread)

  • 1–2 tablespoons unsweetened nut butter (almond, peanut, or sunflower seed butter)

  • Fresh fruit slices (such as strawberries, bananas, blueberries, blackberries or apples)

Instructions

  1. Toast the bread to your preferred level of crispness.

  2. Spread a layer of unsweetened nut butter evenly over the warm toast.

  3. Arrange fresh fruit slices on top.

  4. Enjoy immediately for the best flavor and texture.

My favorite combinations:

  • Peanut butter, banana slices and a sprinkle of chia seeds.

  • Sunflower seed butter with sliced blackberries.
