Chickpea Cookies
These chickpea cookies were inspired by the quiet joy of a morning walk, where delicate wildflowers bloom freely. I carried that simple beauty into the kitchen, shaping each cookie into soft petals—like a small bouquet you can hold. Paired with the blossoms gathered along the path, this recipe is a gentle reminder that nourishment can be both grounding and joyful. By using whole chickpeas instead of wheat flour these cookies are naturally gluten-free and rich in plant-based protein, fiber, vitamins, and minerals. Sweetened with dates rather than refined sugar, they support steady blood sugar, digestion, and overall health—proof that a treat can be both nourishing and indulgent.
Chickpea Cookies
- 12 Medjool dates, pitted
- ½ cup oat flour
- 2 ½ cups cooked chickpeas
- ⅓ cup peanut butter
- 1 tsp vanilla extract
- ¼ cup dark chocolate chips (date sweetened, such as Just Date)
Directions:
1. Preheat oven to 350°F. Line a baking sheet with parchment.
2. Add all ingredients except the cacao nibs or chocolate chips to a food processor and blend until a soft, cookie-dough-like consistency forms.
3. For added sweetness, fold chocolate chips into the dough or press them onto the tops after shaping.
4. Roll the dough into balls and gently flatten into cookies.
5. Bake for 15 minutes, until the cookies are golden and firm around the edges. Cool on a wire rack.
